The Firehouse Smoker is a new barbecue restaurant that has opened next to Michel Angelo’s in New Hartford, CT on route 44.
The “Q” short for BBQ – as employees like to call it – is cooked, low and slow in a central Texas style.
What is a central Texas style? It’s a low heat, longer cook time, where the pit master uses simple rubs such as salt and pepper, letting the natural flavors of the meats do the work.
The meats are typically served sauce-free or with very light sauce, letting the customers add what they enjoy.
We stopped in on a Sunday to try the pulled pork sandwich, which features picked red onions, pickles and pulled pork on a brioche bun – as well as the chicken sandwich, which features chicken and pickles with a light sauce on a brioche bun.
We couldn’t leave with out sampling the mac & cheese, which is always a personal favorite, yet other menu items included Meats: Brisket, Pork Ribs, Pulled Pork, Turkey Texas Sausage, Jalapeno Cheddar / Original Beef Ribs, *Pork Belly*, House Cured Bacon*, Sides: BBQ Smoked Beans, Three Cheese – Mac n Cheese, Cilantro Jalapeno Coleslaw, Warm Bacon Potato Salad, Other Stuff: Dill Pickles, Red Onions, Jalapeños, Texas Bread.
The Firehouse Smoker also uses ingredients sourced locally from farms such as:
Walden Hill Co, Bristol Farm, Canton Petrichor Farm and Gresczyk Farms.
